Goat Buttercream Icing

My son Declan's 1st birthday is tomorrow ( kind of, he was a leap year baby but tomorrow marks 365 days since arrival, lol)

I was making him a cake and lacking any butter and hating Crisco for anything other than greasing a pan, I realized that my goat milk had separated and there was a good 3/4 cups of cream in there. It became the most amazing icing EVER!

Don't tell my children, but I wanted the icing to be green and my food coloring wasn't getting it dark enough, so there's fresh spinach creamed into it.

Mwuahaha!

I know the recipe for the second pic, but they take 9 months to bake.

Your son is adorable! He looks so happy! It's fun being a leap year baby. Every four years I hear from people I've not heard from since the previous time the calendar rolled 29 days for February. People will never forget his birthday!

I know the recipe for that too and have "baked" three of them, LOL

But we do need that icing recipe.
