Can't answer milk production question - what lines are we talking?
We're talking genetic AVERAGES here. You're doing a TOTAL outcross, so it could go any which way. Some kids will look or perform more like daddy, some will look/perform more like momma, some may be average in traits but more like alpines or nubians in others. And, you may get some hybrid vigour.
Breeds are consistent because they were essentially line bred and selected for those traits. Cross 'em, and it's a toss up as to what genetics you get in the offspring. Sure, 50% from momma and 50% from dad, but due to cross over and the extreme heterozygosity of the resulting offspring, it's like unwrapping a present with every kidding!
I can assure you that you will get dairy goats, though. They will likely milk for extended lactations and produce much more milk than a non-dairy breed. Other than that, try it and find out!
