Heaven in a Jar
Cocoa is drying up whether I want her too or not and only giving me a few precious ounces a day, not enough for cereal for me and the children, so I resorted to store bought and the milk sat in the fridge too long and became a bit goaty. Sooooo, I made cajeta. Oh. My. Heavens. It was so good that I used hot water to rinse out the pot and poured that into a mug. Sweet warm ambrosia! Just the thing to get me out of my foul mood

Don't ever put cocoa powder in it and make chocolate cajeta. Life will be over as you know it.

I made a few batches this summer when we had so much milk! Your right that stuff is heaven in a jar, EVIL heaven in a jar that is! Wait until you warm a little up & put it on Ice cream! Dip gingersnap cookies in it, a little in your coffee or warm & drizzled over a slice of pound cake!

That is the first thing I'm making when my girls come into milk. I have frozen milk but its not the same.

Ummmmm, I made cajeta also. My hubby used it all up in his morning coffee. Guess who wants more? Someone said chocolate, oh my gosh, what else can I put in it?

What are your favourite recipes? The one I used said to add flour to thicken and I wish I hadn't done that. It would have been thick enough. There were little flour chunks that I had to strain out!
And I used brown sugar instead of regular because that's all I had other than confectioners'. It was YUM! I got mobbed by children to lick the spoon so I had to find more spoons so they could all have one (4 year old nephew plus my 4 and 2 year old daughters, and then my 10 month old son wanted a taste too)

This may just be the most evil wonderful suggestion ever. For Christmas my mom sent me a whole box of Ghiridelli Chocolate squares of assorted flavors!

CJBegins- You make chocolate cajeta and add orange extract or liquor if you'd rather. I suppose you could add orange zest too but I haven't tried that. I thought about working on an Irish Cream version to put in DH's coffee but decided he could just put Irish cream in it.

Okay Squeaky...after reading this thread I have this mornings milk on the stove..my first attempt at cajeta.
How long do you guys water bath the pint jars?

Wow..okay..I know what all the hoopla is about now. That stuff is outrageous. I cooked a gallon down to 3 pints..or a bit over. It is awesome..I don't really have words to explain it..I just want to keep dipping into it..lol.
Sure glad I got brave..thanks for the usual great info on here!

LOL! I haven't got it in the mail yet, but it is in double zip lock in a padded envelope and addressed. I need to take it to the P.O., because I wanted to get exact postage, but it will have to wait until Monday I guess, because mine isn't open on Saturdays.

Don't worry about it. I'll start a new thread explaining what's going on but I have to sell them. Hence why I was in a bad mood. But I just found out yesterday that I have to sell them quickly. I'm so sad. It might require devouring the entire jar I made.
