For both Muslim and Jewish holidays (since both follow the old, Mosaic Law), a male that is slaughtered must have no deformities or unnatural things done (In other words, he must have horns, and be intact. No castration or disbudding allowed), and be young and healthy. In other words, although you are eating the meat, you are sacrificing him to God, and a sacrifice to God needs to be as perfect as possible.
If the buck is healthy, under 2 years old, with no issues such as mineral deficiencies or diet deficiencies, he will taste wonderful.
The Hispanics around here, when they are going to slaughter a sheep or goat for whatever fiesta they plan to have, will pen him up for a month, give him a high grain diet, expensive minerals, and the kids cut browse for him from trees and stuff. Once they slaughter him, they slow-roast him in a pit with spices.
I have been to their fiestas, and the goat is melt-in-your-mouth delicious. I never tasted a hint of bucky flavor.
