Eating bucks?

I shall be giving my buck - Nigerian dairy - a couple of weeks on CL to see if he sells but if he doesn't its going to be time to eat him.

How does year and a half old buck taste?

We REALLY dont want to kill him if hte meat is going to be too goaty to eat but if he doesn't sell there isn't much else to do with him.

He is challenging me and after three times throwing him down and sitting on him I dont want to play this game anymore.

Goat meat is VERY tasty. Ive eaten two, both were older then 1.5 years and female.

Goat meat is very tasty but I have only had female goat meat. Bucks might be a different kettle of goat all to gether. lol

Might be, I dont know yet either. Just thought Id share my experience. Doesnt seem to change deer into a poor tasting animal though and they are distantly related.

actually you probably shouldnt listen to me at all. I tried to find the article that I got this from and instead I find that many sources say they are related, many say no. They are both ruminants though, and browsers as opposed to grazers... sorry about that...

Ive had countless deer and several wild hogs of both genders - I couldn't ever tell a difference.

I'm waiting for answers too. I don't want to keep a buck but if I can't find someone to breed my 2 does I'm thinking of just buying a young buck, breed, and butcher.

Bucks, even 2 yr old in rut can be absolutely delicious! Soon as he's hung remove testicles.
We had ours ground & a couple of 1yr old uncut boys made into brats & Italian sausage.
We also had fresh pan fried rocky mt oysters but they were tasteless.

I've had meat from an 11 month old intact buck and it was absolutely horrible! About like licking a buck. ACK! And the smell in the house while it was cooking was a clear indication of what it was going to taste like; if you get my drift
Now, having said all that, I gave the rest of the meat to a friend that wanted to try it and he and his wife thought it was just delicious. Go figure. But then, when I tasted his goat milk it was horribly goaty too and they didn't notice it at all. Go figure.

If he doesn't sell you could cut him and wait a month or two.

Yes. You can wether a buck at any age.

But you can't BAND a buck his age. You have to go the surgical route of cutting the danglies off.

I think if he doesnt sell that is exactly what I shall do with him. He should fatten nicely after cutting too.

We tried an intact pigmy buck. It was bad, we ended up giving the dogs a treat.

We tried slow roasting the ribs in a crock pot with cola and bbq sauce.. Came home, the house smelled like buck and the meat tasted like we poured some BBQ sauce on a live buck in rut and licked it off. We tried our best to eat it, it just wasn't going to happen. *gag*

Maybe if we aged it longer or brined it differently or cut the testes off first as mentioned earlier. Whatever we did, we did it WRONG.

See! THAT is why I ask you guys FIRST! That way I dont have to make the same mistakes.

He will be posted tomorrow and if he doesnt sell I shall wait till the flies ease off and do the job myself. Somehow I find myself kinda wishing he doesnt sell

A long time breeder told me once that she and her husband had eaten several mature bucks.......she said that they washed/scrubbed them thoroughly just before butchering. Then as soon as they had shot them, they cut the testicles off and hung them by their front legs and let them totally bleed out before they proceeded with the butchering process.
She claimed that they never had any "buck" smell or flavor to the meat.

I have never done this myself......I am only passing on what someone else told me.

We did a 4 yo ND buck last year in November. Gave him a bath, short lead to the fence to dry, butcher, cut off testicles right away, bleed out fully, and make sure NONE of the hair gets on the meat.
We had other goat in the freezer so he became summer sausage and breakfast sausage links.
