First Attempt...Coming Soon to a Kitchen Near Me

Now that we are milking our two Lamanchas, I am overrun with milk. We just don't drink a half-gallon a day. So today I am going to make some yogurt. And maybe some cottage cheese. I'll let you know how it goes...

I hope it turns out good for you. I'll be curious to see how your cottage cheese turns out too & how you make it. We are getting more milk than we can use too & we do eat cottage cheese quite often, would be nice not to buy at the store.

Yogurt is a gateway cheese. So is cottage cheese. Next thing you know you'll be wondering why you have 8 Parmesans aging in your fridge. It's a disease. My family keeps trying to have an intervention for me but I lay out a cheese plate and they get sidetracked.

It's not hard, we used to make it with cow's milk all the time. We kept our own buttermilk going and used that as culture.

I just made my first cheddar a few days ago. It will be waxed today. I am practically drooling over it. I am totally addicted to cheese making. I never thought it was possible for ME to make cheese. I have made a few now and my family and neighbors have been my guinea pigs (happily I might add) the cheeses are delish! I don't think I will ever buy store bought cheese again. I even pulled my CL add for my doe, I now NEED the milk to make more cheese!

hehe, here too. I thought I'd just make vinegar cheese. um, not liking that as much, so ok, I'll get buttermilk and make a simple cheese. then yogurt. then....

well, now I have a cheese cave, press, several different cultures taht I almost understand the differences of, a pint of rennet, etc....

I get over 2 gallons per day of milk from my 2 does, even in the heat. the yogurt is amazing! I make a gallon at a time, but I also drain it for more greek style. honestly, its better than ice cream to me. add some berries or apple or just vanilla. very little sugar or honey. yum!!

Okay, so we finally got to yogurt-making today. DS #2 helped. We used Greek yogurt as our starter. And it worked!! We haven't tasted it yet, but it looks and smells like yogurt. So pumped.
