Low carb candy "bar"!

Oh, you guys... I made some candy last night that was amazingly good, incredibly easy and relatively low carb (if that matters to anyone - it does to me). I know it's not goat related, but thought I'd share.

1/2 cup coconut oil
1/4 cup cocoa powder
2 Tbsp honey
1 tsp vanilla

Just whisk all that together and then pour into six paper lined muffin cups. Stick it in the freezer for a few minutes so that the coconut oil solidifies. Et voila! A candy bar at around 8 grams of carbs! Take that, Hershey! I'm going to experiment with liquid stevia instead of honey and lower the carb content to around 4 grams each.

It's got my mind totally whirring with goodies that I could infuse in the oil (orange zest anyone?) and mix-ins that would increase the carb content but also the yummy goodness.. nuts, dried fruit, etc.

I've been making this kind of candy for years -- sometimes called cococrack on diet forums. It is VERY GOOD with pecans. I use less oil (about 1/4 cup, and add 1-2 ounces heavy cream which makes it more like store bought semi-sweet chocolate. I use a mixture of sweeteners -- a mixture of stevia, xylitol, and Sweet One is my favourite. Stay away from Splenda as it tends to make chocolate go bitter.

I didn't even think about adding cream! That sounds even yummier!
