Cajeta Cajeta Cajeta

I finally settled on my Cajeta recipe - 1 quart milk, 1 cup sugar, 1/4 teaspoon baking soda.

My DDs LOVE the dark chocolate - so I have made 4 batches of that.

Two batches of plain and today two batches of cinnamon.

I have to start giving away my Christmas gifts or I will eat it all!!!

Interesting. How do you cook it? We used to make cajeta by boiling a can of condensed milk in water. It was always hit and miss how brown it got.

I put 2 quarts of milk in a big stock pot, add 2 cups of sugar and heat. Once the sugar has dissolved I add the 1/2 teaspoon of baking soda(which foams up the milk). If I want cinnamon I add a cinnamon stick at this point.

If I am in the kitchen I turn the heat up and stir more. If I leave I just turn it off. If I can go by and stir occasionally I leave it on low. It takes all day this way but it has worked for me. I then pour it into 1/2 pint canning jars and seal it - then store it in the refrigerator.

Jalapenos are a nice flavoring as well! Now I have to go make some.

Hmmm. . .Jalapenos. . .interesting idea. Does it do the sweet/spicey thing?

How are the Jalapenos that you put in?

I also add a touch of chili powder and a little bit of good burbon, just enough to give it a hint of flavor but not be overpowering.

I was so upset when I made my last batch of cajeta for the year. I don't have any goat's in milk right now...not until March.

You don't use vanilla extract or bean?

I cut whole fresh jalapenos in half and just put them in the milk as I'm cooking it. I take them out when the cajeta gets thick. (And then I eat them; that's the chef's special treat!)

Jill - I did not have luck with adding vanilla extract, it seems like I had cheese lumps in it when I added that.

Kim - I take a big spoonful of dark chocolate powder and mix it with some milk and then add it to the cajeta close to the end - I also will blend in dark chocolate morsels. My DDs say that it tastes like brownie batter.

That's it! I really need some goat's milk so I can try this chocolate recipe! This sounds yummy!
