Now that my wether is gone/weaned

...I have been swimming in the white stuff. My doe Sugar has always been my best milker. She has a beautiful udder, nice teats, and was a decent producer even with her son on her 24/7. However, I never knew HOW good a producer she was until she didn't have a kid on her as I bought her and her son together. Lately, she has been giving me 3+ quarts in the a.m. and 2+ quarts in the p.m. The best part is - her milk tastes the best too, so I am thrilled. By chance, a native american couple my DH knows is interested in some goat milk too and I need to share some of her abundance with someone. Heck, I am running out of room in the fridge and really need to make some more cheese and Cajeta.

Have you made hard cheese yet? Obviously more labor intensive, but so worth it in the end. Uses up a lot of milk too.

I have to make my mesophilic starter first. I also lack a cheese press. Is there any way to get around a cheese press?

For a cheese press I use a tupperware cannister (the small one from the set) that I drilled holes in. Then I put a lid (like a gallon milk jar lid) on top of the cheese as a follower. Then a salsa jar on top of that to hold the weights. The weights I use are weights from the end of a barbell/dumbell set.
