Red face Goaty Milk Mystery Solved..

So, this past week & a half I've been having trouble with the milk...Shelf life has been sporadic.

I'm milking 2 girls, 1 mini alpine & 1 standard alpine...averaging 1 1/2 gallons per day.

I've clabbered & fed a gallon to the chickens & the dogs & cats have shared about a gallon.

Nothing ingested by the goats to cause this. Both girls milk is normal, taste good fresh.

Sterile equipment, rapid chilling & basically have double checked EVERYTHING that could be milk related.

Started keeping Tootsie & Sabrinas milk separate instead of combining them and taste was still goaty!

Sometimes milk was goaty after just a day....sometimes it took a few days.

Milk stored in my square pitcher was fine.....anything in quart or 1/2 gallon jars not so good. Was getting very, very frustrated at this mystery & was going to post for advice..

Until SHE was caught red handed!

She being my 6 year old.

We had someone over for a visit once who fussed over the "slimy milk"....cream being the slime.

So my daughter was opening the jars, DRINKING STRAIGHT FROM THE JAR because the "slimey" part at the top is the very best according to her, then she'd replace the lid & SHAKE THE MILK WITH ALL HER MIGHT!!

I watched her trying to figure out what on earth she was doing......Called to her mid jar shake, startled her, she dropped the jar, it broke...huge mess everywhere so once we got that clean I got my answer.

She said she liked the slimeys so she tried to suck them off the top, then if she shook the milk it wouldn't get slimeys....Asked her how often she shook my jars "Oh, whenever I get something from the fridge, that way no one has to see slimeys if they dont like them"

Explained why the square glass pitcher remained safe, she couldn't shake that one..

I could see her reasoning to an extent on the "milk slimeys"....our odd guest made quite a fuss over the cream on the milk (called it slime, hence our nickname for it) & it made an impression on her.....but to drink from the jars?!?! She knows better than that! "But mommy, I saw DADDY drink out of the orange juice jug, drank it all & put it back in the fridge empty!"

Anywho, we had a talk about the milk, I explained you had to be careful with it, never drink from the jars & never shake it up....then to get the point across I let her try some of the goaty milk lol

Cats got another treat this evening, we had a glass of wonderful tasting 4 day old milk from the pitcher & tomorrow I can rest easy knowing my milk is safe again

LOL now that its all figured out, it is funny!

But while I was jumping through hoops, triple checking everything I under the sun, rewashing everything & contemplating on shelling out the $$ for shipping to have my milk tested, I wasn't happy!

I'm not mad, she wasn't doing it with malicious intent, she thought she was being helpful....just wish I hadn't startled her & made her break the jar......

Should have seen her face when she got a big ol gulp of that goaty milk though! hahaha

Too precious! Okay, help me out here.. I get the part about drinking from the jar contaminating the milk, but would *only* shaking the jars make the milk taste bad? If so, why?

Goaty flavor is caused by the breakdown of caprylic and capric fatty acids.

Shaking the milk (especially as hard as she was...a few more shakes and we could have had butter! lol) breaks down the fragile fatty acids in the milk causing a "goaty" flavor.

We always filter, chill rapidly & never handle the milk roughly....Typically my milk keeps a wonderful, fresh flavor for about 3 weeks if cared for properly.

Too funny Crystal! Glad you got to the bottom of it. I dont shake mine either, only cause I want the cream at the top when I pour a glass.

Huh. We have always given the jar a shake when we pour a glass of milk. Never tastes goaty/. I don't personally want a big mouthful of cream - don't really see the point in that. I like it evenly distributed.

Same here, but it sounds as if the OP's daughter was doing the "paint-shakin' boogie" on the milk - whole 'nother effect.

And not only was she doing the "paint-shakin boogey" (loved that!), but she was doing it often.

Thanks so much for a good chuckle! I'm sure that you were just about to pull your hair out, trying to figure out what was wrong with your does.

LOL thank you, she's a doll......even if she did cause me over a week of unessesary trouble shooting & frustration

And yes, these weren't just casual shaking episodes.....they were multiple, vigorous "paint shaking boogie" episodes! Add that to the very real possibility the milk contained a bit of back wash from her cream slurping sessions & you have yourself several jars of goaty tasting milk

Crystal..As a guy that raised two very bright daughters, I think you should expect this one will provide some lively years to come. Hang on to the ability to laugh, you already know it is the best choice. The pay off is here, now for me as both have daughters just like they were...Glen PS. I am borrowing "the Slimeys" expression for future use.

~laughs~ Glen, did you curse your daughters? My sister and I were talking the other day about how our mother cursed us with the "may you have daughters someday JUST LIKE YOU!"

The fact that each of us have a girl child EXACTLY like us, down to making the VERY SAME mistakes we did to the letter, is uncanny and weird. It is like going back in time and watching the past repeat itself, and being just as powerless to stop the bad parts.

We made a point of not passing on that curse to our daughters.
