When we have one butchered which is very rare here I use it mostly just like I would beef. The ribs are my favorite & I put them in the slowcooker with BBQ sauce. Some of the ground we make into breakfast sausage which it makes great sausage.

Yep I like the ribs also. Mostly we just have one ground and use it just like hamburger.
I do keep the ham roasts and put them in the crock pot for when we have a goat meeting and it is my turn to feed.
I use a seasoning called Canadian Steak Seasoning, get it at Sams Club. It does not take very much and 9 out of 10 folks don't believe they are eating goat.
Of course I don't understand why more folks don't eat goat. I like it.

A leg or roast (depending on the size of the goat) in the crockpot with cream of mushroom soup, diced potatoes, diced onions, and any other veggie you want to add. Very tender and YUMM!!
I also use ground in tacos, spaghetti, chili, etc.

I like to process/package our goat meat according to how I will be cooking it.

The hocks & ribs are bar-b-qued.

The necks turned into stew with potatoes, onions, carrots, bamboo shoots & sliced chestnuts.

The sirloin (if from large goat) are cut into "chops" and rolled in a good batter; then they are fried or broiled.

The hind legs are often slicked into thick steads or turned into a "roast" with potatoes, onions & carrots. Very little water is used and the juices are turned into gravy.

The rest of the goat meat is turned into ground meat which I then turn into either hamburger, salisbury steak or sausage.

The recipies are always made up, depending on what seasoning I have available; but there is nothing I do with goat meat that I have not done with beef.

[Our dogs always get "cooked" legs (not hooves) and all the bones (never the head) and NEVER any of it is raw because our dogs "guard" our goat herd.]

Thank you! I'm hoping our whole family likes goat. I've heard it tastes like deer which we eat quite a bit of. I don't think there's much of anything we don't like except sheep. BLECH! LOL
