You either need a cream separator or milk from a goat with high butter fat. If you have milk from a goat with high (over 7%) butter fat then you can just fill a quart jar half full of room temp whole milk and shake it for 15-20 minutes.

We just take a half a jar of whole goat milk and shake till we get butter. Never used the separator

Yeah, I have been using the butter making process as my separation process. I am getting a Novo cream Separator though this spring. It'll make being precise with fat ratios for different cheeses easier.

Also, best place to be asking these questions is under the homemaking heading in the Dairy forum. They know their stuff there!
