Gingerbread flavored coffee creamer / cajeta

After paying FOUR DOLLARS for a Starbucks Latte, I figured I could come up with something just as good for a fraction of the price. Thank heaven for goats.

Gingerbread flavored coffee creamer / cajeta

1 quart goat milk
1 cup sugar
2 tsp corn starch
1/8 tsp baking soda

Whisk together and place over medium heat. Bring to boil. Turn heat to low and stir every ten minutes for a couple of hours till thick and a lovely tan. You should have about a pint of cajeta.

Remove from heat.

Add:
1 tsp cinnamon
1 tsp allspice
1 tsp nutmeg
1 tsp ginger
1 tsp cloves

Stir till thoroughly combined. Chill.

Use as desired in coffee.

Note: You can double the spices if you want. Just depends on how much spice concentration vs sweetness you desire.

Thanks Alice, I love the flavored coffee creamers & even at the grocery store they are kinda exspensive I think. I wonder can you make this recipe with cow's milk. I don't have any goats in milk right now.

Yum yum! I was wondering the same thing as Katie. I don't see why it wouldn't work with cows milk....

Yes, but you can't call it Cajeta.

It will just be flavored caramel sauce.

Shoot! Cajeta sounds a lot better than boring flavored caramel sauce

This morning I put a spoonful of cajeta in my daughter's tea - it added the sugar and the cream at one time!

I am canning the cajeta now for gifts

Well Shoot! I may just have to milk one of my does' in the spring just so I can make cajeta! I want the good stuff not just plain old caramel sauce, caramel sauce sounds like I should be putting it on ice cream instead of in my coffee.

Ok Katie - I will send you some too

Alice's recipe with the cornstarch makes it thick like candy - I am still testing it - lol

Without the cornstarch it adds cream and sugar to your coffee or tea. I added cocoa to some - I am going to get fat BEFORE the holidays!!!!

They all sound so good! I think the holidays are meant for us to gain weight & I have a terrible sweet tooth!

I'm REALLY going to try NOT to gain any weight. I'm walking 45 minutes on at least four days a week, lifting light weights on two days. Riding my inside stationary bike when the weather's bad.

It's hard to have goat milk and goat cheese and goat yogurt around and not gain weight!

(Going to the kitchen for yogurt and granola)

I second that sweet tooth - I could live on Cajeta! That is one reason I started making soap - I can't eat it, or work on soap and eat at the same time

So is there by chance a good receipe out there for Chi Tea? I drink the coffee black but may change after reading this receipe.
