My does milk tastes like cows milk, my dh wants to know why?

Hi all,

So I am happily milking and drinking fresh milk. It has no goat flavor. The carton goat milk we have been buying for a couple of years has a very mild goat flavor. Meyenberg is the brand name. We are accustomed to the mild goat flavor and my husband wants to know why our milk does not have it. I have no Idea. The store bought milk is also a little thicker.

I told him maybe they added the flavor so goat milk snobs would be happy. I guess at over $12 a gallon people want it to taste different.

I guess I could go get a buck rag and put it in her pen! but I really don't want to try that.

Has anyone else noticed this. Or are we the only people who would pay $12 a gallon for goat milk for their coffee!? Well probably!

Goat milk from the goat, as in FRESH, should not have a goaty flavor. It should taste like clean, sweet, fresh MILK. That stuff in the carton at the store is not goat milk, well maybe it did come from a goat, is just plain nasty.

So in answer to your DH's question on why it doesn't taste goaty, because its not supposed to.

Maybe because it is processed different so that it can be sold commercially, and it may have come from a different breed of goat then what you have.

Goats' milk proteins are smaller and easier to break down. Under normal pasteurization, goat's milk begins to break down and will get a 'goaty' taste. Since most people's experience is with PASTEURIZED goat's milk, they think all goat's milk has the strong taste. However, fresh goat's milk will NOT have the taste because it is not pasteurized.

That stuff from the grocery store is ultra pasturized. I tell my "samplers" that the way they commercially handle the milk bruises it - and they all go Ohhh.

If you really want that flavor (I personally can't STAND the way Meyenberg tastes!), put the milk in a blender and and let it sit in the fridge for 3 days. It will be goaty! Anything that breaks up the fatty acids will lead to the flavor developing.

Meyenberg milk is nasty. The proteins have been bruised/broken, and it tastes like ten day old milk. Probably is ten day old milk.
