I don't use a double boiler.

Pasteurization can take one of two forms:
Low Temperature (145F) Long Time (30 min.)
High Temperature (162F) Short Time (15 sec.)

A little advice to save you money...

I bought a 150.00 turkey frier from Cabellas. It's electric and has a digital thermometer... I LOVED it. So fancy and worked great, as a double broiler. We still use it for cooking large amounts of food and for scalding chickens/ducks now that the dairy goats are gone.

For colostrum, the little multi cookers work excellently. Just set bags of double zipper ziploc bags (all other bags I find leak) half full of colostrum and keep an eye on the temp. And for 20.00, can't beat 'em.

Very important, get a few 2.00 candy thermometers from wal-mart to keep an eye on the temps externally as well.
