First home slaughter

This morning, two friends and I slaughtered three goats. It is amazing what a great abbatoir my daughter's wooden swing set made for hanging goats to skin. The whole process took us about an hour per goat which I know is slow, but we talked and kibbitze a lot. I spent the afternoon cutting up goat and supersucking (seal a meal) legs, loins, stew meat, etc. The offal girl is supposed to be here by 7:30 for guts for her raw meat pets and then I am getting in the shower! Yeah, meat in the freezer!

This has been a Week o' Meat! Tuesday was geese (I learned a LOT), yesterday was goats, and today is rabbit. I think I'll roast a leg of goat at my sisters up in Oregon next week. I have an ENTIRE back leg. Any good recipes out there?
