Question Creamy Milks Some Days Other Days Not

What makes the difference that my one goat one day has extra creamy milk and the next day normal? When her milk is creamy her milk production goes down. When it's normal I get 1 quart 1/2-3/4. Why is all this happening? I opened a jar of extra milk I had and it was thick with like a inch or 2 of butter looking stuff. I had noticed she had been hard to milk out lately. Does this mean her butter fat levels would be very high. I think she would give more creamy milk than a Nubian.
