For butter, it will depend on your percentage of butterfat in the milk. I hardly ever have enough cream to make butter, so can't help you with that one (although, when I had the Kinder goats, I did sometimes get quite a bit of cream off their milk -- the Oberhasli's aren't quite so generous).
Yogurt -- you put in a quart of milk, you get a quart of yogurt back, no waste.
Cheese -- it depends on what kind of goat you got the milk from. If from one of the large, standard-sized breeds, you'll get about a pound of cheese from a gallon of milk. If from a Kinder doe, you'll get two and a half pounds or so from a gallon of milk. Probably about that from Nigerians, also, but I haven't had them so am not sure.
Ice cream-- it depends on the recipe you are using. Some add more stuff than others. But basically the same as yogurt -- no waste. (With butter, you are pouring off the buttermilk, though it can be used for other things. With cheese, you are draining off the whey, though it also can be used for other things, so is not a total waste.)
