Best goat breed for making sharp tasting chevre?

I made some with milk from lamanchas, and the taste is more mild than I was trying for. If I were going to purchase a milk goat with the intention of making strong tasting chevre, which breed would y'all recommend?

I have had nubians, toggenburgs, fr alpines and saanens. My experience is that it has LITTLE to do with the breed of the goat, and MORE to do with the individual goat. My toggenburgs give very sweet milk. You will need to test the milk from the individual goat you are considering to buy.

Ever try adding a little lipase to your cheese?
I know it adds the bite to feta, perhaps it will help out your chevre as well.

I agree about Toggs - they were bred to make more flavorful cheeses.

Another thing you could try is to hold the milk a couple days before making cheese, plus you can age your chevre. Make logs, wrap them loosley in waxed paper and put them into the back/bottom of your fridge. They will dry out somewhat and develop a stronger flavor over time. Not sure how long, but you can taste it every couple days to see.
