Questions about butchering

ok I have a lot of questions. We have always had meat processed for us, but obviously it is much less expensice to do it ourselves. (By ourselves I mean my brother and Dad. )

Are there some good sites to look at on how to butcher? Anything we should know about how to keep the meat from being tainted while butchering. (My grandma has had some NASTY goat cause it wasn't butchered right.)

About what age, weight is good to do so? We will probably end up butchering the 2 wethers I had for sale on here. (Nubians) They are being weaned right now at 8 weeks old because they are dragging their mom down and are pretty much weaned anyway. Eating very good, and she is kicking them away all the time. They weigh about 25 lb. right now.

Should I wait and feed them out for a couple months? Is 60 lb. about right? What should I feed them? I can mix my own ration for them (corn, oats, and a dairy pellet), or I could just feed them the grain I feed the other kids. It's a pelleted show goat formula with rumensin in it. (I am not thrilled about eating goat that has been fed medicated feed, but there is no withdrawl on it so?)

I am going to be dry lotting them so they will get alfalfa hay free choice. They will be able to go in and out. What are some keys to feeding these guys out and again when should we butcher? I want as little money going in these guys as possilbe. I can make up my own protein % and I was thinking 16%would be good, what about the fat? How much should that be? About 3-4%
