goaty cheese?

All of the hard cheese made from goats milk that I have tasted, tastes like a smelly buck... now is this normal? If so, then that's fine, I just won't bother making my own. I have bought it twice, one was made with raw milk, the other with pasturized milk. I have made a soft cheese with my milk and it is fine, but wanted input before I invested in equipment for hard cheeses......many thanks.....lynpea

Was the hard cheese aged long enough? I make cheese and find that if I don't age my hard cheese's long enough they taste bad.My inlaws love it that way but I like to age mine for at least 2 or 3 months.

But the fresh mozzeralla cheese I make with goats milk is wonderful to eat right away.

Ann.

if you like the taste of your goats milk in soft cheeses, then you will likely enjoy hard cheeses from the same milk. it IS better if you age them longer, though it can be HARD TO WAIT. Also, I find that what type of feed the animals are eating makes a huge difference in the outcome of the cheese. Making cheese is totally fun. You should go for it.

Useing really fresh milk will taste better. Also very clean equiptmen will give you nice tasting cheese.
Are you comparing store bought cheese to fresh homemade?
The store bought stuff is nasty.

I bought some store cheese and some "artisian" cheese, both were equally bad......smelled and tasted like a buck in rut.......even my baby who drinks LOTS of goats milk spat the cheese out on the floor!

A friend of mine had me taste some of her cheddar from goats milk the other day and it tasted like I'd just chomped on a big ole buck butt. I'd always made soft cheeses and mozzerella from goats milk and loved it, but had never tried making aged cheeses. Perhaps she didn't age it long enough. I"m not sure. I hope that's what it was because this time around I'd like to try some of the hard cheeses but if they taste like hers... I'll stick to the soft cheese and mozzerella. LOL

When I made goat milk yogurt, the older it got the more it smelled & tasted like a buck. I dont know if you can age past that smell/taste. I just use cows milk now for yogurt. I have made kefir with the fresh goats milk, and it was good, but it doesnt last more than a day or two.
