Candy from goat milk

Does anyone know if instead of milk & whipping cream, I could make goat milk caramels? My recipe calls for 1 cup milk, 1 cup whipping cream.

How Strange! I was just telling the older kids it was too bad we lost the christmas candy caramel recipe in our house fire. They were to die for they were so good. I;m sure they were a mostly milk recipe. I'll have to check online tomorrow and see if I can find a suitable replacement recipe. Store bought caramel can Not compare!

I can share my recipe. It is from our family cookbook. It is wonderful! I just don't know if goat's milk alone will work or if I need whipping cream. I do get a thin layer of cream on top & could scope that out with the milk.

What KIND of goats do you have?

Nubian, Kinder have very rich milk and you won't need the extra whipping cream.

The rest? You may not need it either.

I make ice cream using goats milk but NEVER add whipping cream. I had Oberhasli and BoerX last year and it worked great! VERY creamy!!!

At the very least you will get cajeta. Now, I'm drooling...

There's a goat farm here who's made all sorts of fudge varieties from their goat milk.

As posted above, cajeta is a Mexican caramel that I believe is traditionally made with goat's milk.

TOTALLY low cal/low fat too...???? OHHHHH, you live in that fantasy world, too? So do I!!!!! And if you eat it with friends, the calories divide out into very small amounts. Or, IF you eat it alone, in the closet, and no one hears you, then no one hears the calories either, and they don't count. Can you tell I'm on day 3 of a diet?

I know that Becky Goldthwaite sells some kind of candy - I think it is goat's milk fudge from her website (look up Goldthwaite Nubians) and check out Black Mesa Ranch - they make TO DIE FOR chocolates - truffles, toffees, barks, and it is all made by hand, on their totally off-grid homestead in Northern Arizona. Oh, and it's all their own goat's milk and cream too! If I sound like an advertisement I just can't help it - it is the best tasting stuff EVER. So, I know you can make candy from goat's milk - it's a specialty, 'artisan' item!
