Highland Steer

Butchered the two year old Highland this week. He was completely grass and hay fed, hanging weight 498 lbs, fine white fat with visible marbling. I guess I'm doing something right. Having roast heart today, can't wait to try some steaks on the barbie.

Nothing better than beef that you raise yourself. I raise longhorn cross calves to butcher, we just butchered and man is it good. We do grain ours for a minimum of 90 days just insure good marbling. The one we just butchered graded high choice which is pretty good for only feeding 120 days.
