We butcher our Angus anywhere from 21-24 months. I would prefer to wait until 27 months, but the owner of this farm wants em done no later than 24.
"Ideal" weights are 1000+... but honestly those are irrelevant. We have certain times of the year we butcher that fits into our planting, event, farm tour, schedules.. .so thats what is done.
If you have a 400lb angus you won't see a lot of meat off that one yet, sounds like you're not far past 6-9 months old. I would hold off at least a little while longer so your bone:meat ratio improves.
