Having our first jersey butchered

Im guessing he is about 800lbs maybe a bit more but hes about 18 month old Jersey bull who has been on nothing but high quality rye/burmuda fields. I dont like hes a bull but do like his price from him belonging to a friend. My question is that talking with my friend he says the beef should be mostly ground up because Jersey's didnt make good steaks but yet reading time and time again I hear Jersey is the cattle mans beef choice. So anyone have and suggestions on what to ask the butcher to do? I am splitting it with another person. His doomsday is 7-17 so I am not sure if feeding him any corn will help at this point but if so let me know. Thanks guys

Feeding him corn this close to butcher won't make any difference, but it certainly would not hurt anything. If he were mine, I would castrate him and feed him for atleast 90 days. That is how I would do it, but others have their own ways.

If I had a choice, beef from Jersey steers would be all that I ate. I used to raise Jersy bottle babies and then on up for beef. They are very good. On another thread here, I mentioned a question posed by an inspector in the packing industry. He asked our meat judging team in college to rank a given set of breeds as to their overall quality and Jersey's were one of the breeds. As far as taste and palatability goes, Jersey is right at the top. They aren't exactly economical though, as they do take a long time to grow and finish out.

On yours, I would make sure to get all of the prime steak cuts atleast. After that, you can get the rest ground up if you don't care for the chucks, rounds and arm roasts. Most dairy cattle being butchered for beef don't yield as much, so don't be disappointed when you go pick up your beef.

As has already been said, I would be very surprised if you didn't like the beef.

Dairy beef is some of the best I have had. The ones here that tasted best were 2 year olds. They were fantastic.
