Beef heart

Hello I'm having the butcher man coming to my place this week to take care of a steer for me, I really want to save and use the heart to make a stew, my question is should I let the heart rest for a few days or could I pot it the same day without it being too tough? Anybody have any experience with this??

I would let it rest a couple of days.

We always ate the internal organs first. My grandmother had the hearts and kidneys brought straight to the kitchen.

We eat the heart the same day. Cut into cubes fried in onions its good and tender. its my 8 year old daughters favorite meal. I butcher n she right there makin sure i save the heart for her

we've always soaked them in salt water for a day
