Freezer Cattle Question

Is it better to butcher out a steer or a bull? We were just given 3 holstein Bull Calves who are almost a year old. Should we get the vet out to cut them or does it make a difference in the meat? Any info is greatly appreciated.

If they are going to be butchered soon I wouldn't cut them. If it is going to take very long to get them to butcher weight cut them and dehorn for safety more then meat quality.

A steer will have better marbling and that makes all the difference at dinner time...Topside

The only (1) Holstein I sent to slaughter was exactly 12 months old, what a mistake. The freezer was low so I tried a faster growing Holstein vice Jersey. One more time, what a mistake. My suggestion would be to butcher after 18 months old. Of course I have no idea what your true plans are....Just my advice, I raise Jerseys for the freezer....Topside
