Where's the Beef? (pics)

Ultra-sounding bulls at Tennessee Tech today. Took readings from the rib-eye area, back fat thickness, rump fat and marbling quality. The red bull had a rib-eye area of 17 square inches, average is 13.....Enjoy your weekend...Topside

David, this university primarily raises Simmental, nearly all are black hided. Only 5% of the entire herd are Registered Angus and a few commercial crosses tossed in...Topside

Tony, by the number of white fat specks per sq. inch on a grid. The picture appears on a computer monitor and by using a math formula the computer determine quality grade. Topside

That's interesting Topside. Curious to know what the units of measurement are for marbling and what kind of results you were seeing with this group.

And all of those purebred black hided Simmentals are eligible for the Angus beef program. What a stupid program.
