Highland/Brahma bull beef

So in the spring we brought home a highland brahma bull. We wanted beef and an animal to freshen our cow. We got him for $225 and he was about 1 1/2 if that. well, he was on grass all summer and about 2 cups every other day of all stock just to get him coming to the catch pen. Time came about 10 days ago, to get him off to the butcher. The processor advised me that a 2 year old bull would be tough and nasty and I should just grind him and have roasts, I said nope, steaks please! He looked at me like I was crazy.
Just got him back today. Man, he is GOOD! Like, really good! MUCH better then the red angus cross we got last time. We got 250 pounds back after deboning, as he was a small guy, but perfect fit for our freezer. Total per pound after butcher fees and purchase and feed is $1.50 per pound
Dont hesitate to butcher a young bull, especially if it has highland in it. I really hope my cow has a bull next year.....or a heifer, but a bull would be yummy.

Very cool! We have a pure Highland bull that is just under 1,000#'s. We've been debating over sending him to the butcher or waiting until next fall.
