I have a few different breeds but the answers to 1 and 2 are the same. Remember that I'm pretty new to cattle so my system is new as well.
1) I wean when I think they are ready. I make sure they have access to water from the moment they get here, and access to grains and grass as well. Once I know they are eating on a fairly regular basis and drinking well I cut them back to 1 bottle in the morning and a half in the evening. Age ranges from 4-6 weeks depending on how well they settle in.
Then I cut back to half bottle for both feedings about a weeks or so later. This can take a little longer if I feel they aren't eating enough or seem to have stopped putting on weight.
A week after that (roughly) it's cut to one bottle in the morning. Again, provided they are doing well.
A week later no more bottles.
2) Varies too much for me to give a good answer. Plus, I don't weigh them...lol
