Question trading meat for processing?

I am wondering if butchers will trade meat from the animal they are butchering, for the processing and packaging of the animal? Meaning I give them a percentage of the animal they are processing, instead of paying them with money. If so what is the average percentage that they take? Also, do butchers let you watch the processing take place?

None I know of work on percentage. But you might find someone who will purchase half your beef, which would offset your costs.

You would have to process in either a Federally inspected facility, or in a facility in a state that allows retail sales of uninspected meat. Never hurts to ask. I would check with smaller federal inspected plants. Bear in mind that if you subject your meat to federal inspection that there is a small chance that the inspector could condemn your meat and you would lose everything.
