q's about 2yr old dexter bull calf

Thinking about turning my 2yr old bull into meat. Do I need to steer him first or would that be pointless at this time? Does anyone know the approx. amount of packaged meat that might come from a 2 yr old (guessing approx. 700 lbs could be off though).?

We did a 2ish year old bull and we are still eating the meat and it is great. He was about the weight you are talking about and I can't remember but I think it was 400lbs of meat. It doesn't look like a lot when it comes back though. We haven't found the meat tough or anything (course I pressure cook roasts for stew). He was just grass fed.

There's no need to steer him. Check his condition, though. If he's a little lean looking, keep him a few months and give him some good feed. It can be grass or hay, but good quality and plenty of it.

You can expect to get a packaged meat yield percentage in the high 30's. Say 245# to 275# depending on his body condition and the types of cuts you ask for.

Ditto on what's been said above. We do not steer any of our bulls that we intend to eat. We just sent two in to freezer camp this week.
