Cutting chart

I have searched the net and found nothing. I have butchered up a couple of steers and although they always taste real good I would love to know just how and where those good cuts are. For instance where the heck is a skirt steak from.

Hard to see but that will work. Yea we are a bit late but we hung him yesterday. Weather should be cool for the next 10 days + and it is cooler inside the barn. I will have to keep a close eye on the thermometer. If it gets too warm in there we will have to start cutting him up.
