We've occasionally slaughtered a jersey cross steer that was less than a year old. The meat is very good. However, it's no where close to finishing and showing any kind of marbling at that age. And, you won't get a great yield of meat from it unless you've been really pouring the feed to it since weining at 6-7 months old. Still, yields won't be that good. It takes a while for one to grow out a beef to the finishing state. (whether on grass or grain.)
When the freezer gets low on beef, the lucky winner of freezer camp is the steer that weighs the most at the time. I just can't stand to go to the grocery store and give highway robbery prices for substandard beef.
