I raised Piedmontese/Charolais for our own use. I ordered some AI straws from a Canadian bull and crossed with purebred Charolais cows. I was not impressed. If you really want ultra-lean, they are great for that, but we've had a couple tough and tasteless ones. The last one took a long time to mature, and didn't finish well, but then again we've never used a feedlot (although we used to give some grain), and this last one was grass finished. Our pure Charolais calves tasted a lot better, and finished better.
We no longer want ultra-lean cattle now that we switched to grass-fed, becausethe fat is actually more healthful now, and I am presently crossing my cows with a low line angus for a smaller frame. I have two heifers like that, and they are awesome. They should have better heat tolerance than Angus (we are in SC now, used to live in PA)
