buying on the hoof ??'s

I see several local ads selling beef in various ages for $1 a lb live weight....
I am not sure I could raise a beef calf in my small pasture with the goats and all but I see some selling grown animals as well, I'm just curious as to what percentage of the live weight comes back as finished product? I know there is loss due to hide/bone/offal..just not really sure the % on a beef animal.

TIA

Bone in--you ususally get 60% back in meat and meat products.
Bonless--more like 40%.
These are "general" percentages....each bovine is different.....

Jay is right on...You can raise a feeder calf anywhere, no pasture to small, just need to have hay available and gain the animals twice daily.
