when to butcher dexter bull?

I have a dexter bull that is about 13 months old. When should we send him to freezer camp? I was thinking in september? He is on great pasture and gets grain once a week. how long before we take him in should I start graining him more? I've never ate a dexter, but i bet he will go along with the hogs i am takin in Friday real good.

I got in a hurry for my first taste of Dexter and sent my first steer in at around the same age. It was a little too early. He hadn't marbled as well as he should, and in the next few months he would have gained a lot of weight. I will wait until 24 months for the next one.

The meat was certainly delicious. It was just so lean that I had to learn how to cook it without making it tough, and I sure miss the extra beef I would have gotten if I'd waited.
