What to do with all the milk???

We have an uncle that has a milk cow and he has been supplying us with fresh milk. Problem is, a lot of it goes bad before we use it all. What can we do?

Does anyone make their own evaporated or sweetened condensed milk and cans it? That would be exactly what I'm looking for. Yogurt and ice cream are another avenue. We've made mozzarella once and it was good, we'll be doing that again. Any other ideas?

Thanks in advance.

How fast is it going bad? Is the problem just too much milk? Maybe it needs straining and cooling faster than is happening. If you get way too much milk - tryi raising a calf or a pig. The milk gone sour can be diluted and used to fertilize the garden. Milk grows great pumpkins!

I've heard world chamption pumpkin growers use milk as a fertilizer. I suspect it is the calcium in it.

Soured milk is also just fine for calves that are not newborns......my calves get all sour milk and they love it.

if you have the freezer space you can freeze some too, and freeze the cheese as well... then you have stuff for those months when she's dried off and you arent milking :P

Pigs, bull calf. Hard cheese. Butter, of course.

Condensed milk has powdered milk and sugar in it, and both it and evaporated are cooked down, which uses a lot of power. If you aren't doing it on a woodstove it's going to be expensive.
