Don't you have a slaughter house near by or at least an hour away? We age ours 14 days and more if they are busy. They vacumn pack everything and know how to cut it right. It is well worth the money to have it professionaly done. We used to double wrap at another slaughter house , but the meat still freezer burned; but this vacumn wrap is the way to go. Think about how much time you spent raising her to this point and get the job done right. I have a friend that we feed out steers together. They kinda compete with one another and keep each other company. But the best is that one of us doesn't have to feed them daily for 3 months. I sell half of mine to another family and get enough to pay for the feed and about $200 more. If I can get $600 for a 550 pound calf at the sale barn , I can eat beef for a year for about $400. Good luck.
