Pasteurizer

I just bought a pasteurizer when it arrived the directions and maintenance book that was supposed to accompany it was missing.

It's an older 2 gallon size Home Health brand. I plugged it in and it heated up quickly and the buzzer sound off, and was up to around 150 degrees, so I assume it's working.

What is the proper procedure, it it done when the buzzer sounds, do I leave it for a certain length of time after that, do I let it cool slowly, how do I use it?

I believe the milk needs to stay at 150F for 30 minutes. After that point, you need to cool the milk extremely quickly-back when I was afraid of our raw milk what I did was place the pot into a sink full of ice water, and stirred the milk until it got down to about 75-80F which I then put into glass jars in the refrigerator.

Milk needs to be heated to 165 for 15 seconds and then rapidly cooled.
