can I make cheese w/cream and lemon juice?

I read somewhere the other day that you could make some kind of soft cheese with cream(raw) and lemon juice. Is this right? Does anyone know the particulars? Please help. Lisa

When I traveled to India on business I came by a cheese called paneer in English. This is a "cottage cheeselike" product that I was not accustomed. If you will google paneer I feel certain you will find how to make same.

You can make mascarpone with 1 qt cream and 2 tbsp lemon juice.

You can make Queso Blanco with 1 gal milk and 1/4 cup lemon juice.

You can make Paneer with 1 gal milk and 8 tbsp lemon juice.

Directions are almost identical: Heat milk or cream to 185 to 190 degrees, slowly add juice stirring constantly. When curds separate from the whey, drain in muslin or cheesecloth-hang to drip for desired consistency.

The 'cheesecloth' you'll buy at the hardware store is pathetic! A nice, loose cotton gauze in the fabric department is closer to what 'real' cheese cloth is.
