Steer off to the slaughterhouse.

I took the 18 month old holstein steer to the slaughterhouse yesterday. Hanging weight was 750 lbs. Good thing he was ready to go; we're just about out of beef.

Sounds yummy, how long will it hang and age? What was his total live weight? I'm sending one in on Sept 15, like you our freezer is looking bare. My animal should weigh about 1200-1300 pounds by then. Home raised, clean meat Enjoy tyusclan....John

It'll hang until the 22nd, and then they'll cut, wrap, and freeze it. We're scheduled to pick it up on the 25th. I didn't have any way to weigh him live, and I don't have a tape, but based on the hanging weight he weighed 1400-1500 live weight.

We had actually planned to take him in a couple of weeks ago, but we didn't know till we called that our slaughterhouse has gotten so busy that you have to have an appointment now. Yesterday the 8th was the first day they could take him.

Usually a big baked potato and a salad along with a Killian's or an Amber Bock.

You might also like their Two Hearted Ale, which gives a nod to Earnest Hemingway's trout fishing adventures on the UP of Michigan. A fine use of chemistry , LOL. Perhaps a side Loaf of just-baked Sourdough slathered in real Wisconsin butter as well.

I have some absolutely wonderful ice cream to add to the table! My men won't eat her butter, so that's what we do with her cream. Peanut butter chocolate chip is the fave right now...

Won't Eat Butter?

Never heard of a man that would not eat hot buttered biscuits.

However, where there is butter there is going to be buttermilk.

A big pitcher of cold buttermilk
with some flakes of butter still in it,
a slab of frying-pan baked cornbread,
a big pot of beans cooked with some salt pork
and you beside me in the wilderness.
