3/4 Ayrshire 1/4 Jersey bull calf

Do you think that a bull calf that is 3/4 Ayrshire and 1/4 Jersey would still end up having the yellow tallow if raised for a steer for the freezer? The Jersey genetics must be pretty strong because he looks like a jersey.

By the way he's for sale.

I was on another site, and someone butchered two different steers, both had Jersey genetics. One had white fat, the other had yellow. It is a 50/50 chance, depends how much of the Jersey he picked up.

Must be! My Saler-Guernsey cross steer we're eating had white fat, when I was expecting yellow...

Heather, I think it can be a bit of a pig in a poke. We killed one for the freezer that was half Jersey and the fat was white. A couple of years before we had killed a steer that was 3/4 Angus and 1/4 Jersey and the fat was yellow.

Personally I don't care what colour the fat is but I know a lot of people get a bit funny about it.

I'm trying to get this little guy sold but it looks like I will be giving him away (if I can) because everybody is weirded out that he might have yellow tallow. Personally I don't think it matters much either.

Is this guy for meat?

How much will he weigh at butcher live weight possibly?

We actually have people who ask for Jersey steers to raise for beef. One guy insists on full Jersey, no crosses for him.....I haven't had anyone make a deal over the yellow fat.
Thats strange that everybody is adverse to it there.....if we were closer, I know I could find you a customer.

I have had beef with the yellow tallow and I for one prefer the yellow to me it has real flavor. Up north how much for this guy?

Should make 1,000 lbs. without special treatment. Maybe 1200 lbs. given more time & feed. Heather will send PM. Vigorous, healthy calf.
