Homemade fig ice cream

4 eggs
1 cup sugar (can use a bit less if you want)
1/2 pint cream
2 cans condensed milk
1 Tbsp vanilla
fruit, mashed (I use about two cups)
Milk to the "fill line" on your ice cream maker (ours makes a gallon of ice cream)

Combine all ingredients (except milk) in a large bowl. Transfer to hand crank ice cream freezer. Fill to the "fill line" with milk. Crank like crazy till it's too hard to turn.

You can make this with fig, banana, peach, strawberry, whatever.

Note:
I have never worried about the raw eggs, but if you are, you can mix the cream, sugar, about a cup of milk, and the eggs thoroughly, then cook them gently over low heat on the stove. Chill and then combine with the other ingredients.

Thanks y'all for all the great fig recipes. They sound yummy. If I can ever get my fig tree to produce more than a handful of figs I will be so happy.

My hubby's grandmother used to make strawberry fig preserves. I don't have the recipe and was wondering if anyone here had heard of the recipe???

Figs are easy to grow here.Take a limb and root it in a pot of potting soil. PLant it when it is aboout a year old. Fig bushes like a lot of lime. Every one should have 3 or 4 in their yard.I like them best right off the bush. Brown Turkey is a good one also Chicago Hardy is another. Jay

Strawberry Fig Preserves

Ingredients

4 cups peeled & mashed figs
2 3 oz. boxes strawberry Jell-O
3 cups sugar

Preparation

Peel figs & crush. Pour dry Jell-O mix over figs & let stand for 1 hour. This will bring all the juice to the top. Pour sugar over fig mixture. Heat on low setting & cook for 5 minutes. Gradually increase to medium high & cook for 15 minutes. Heat to almost a boil, but do not boil (boiling will cause figs to turn dark).

Note:
I also saw a post that said you could make it with MUCH less sugar. Experiment to find your preferred sweetness.
