I have made jerky from deer backstraps for 20 years, within hours of killing. I cool the meat until it is stiff enough to slice easily. The jerky is done by the following morning. I certainly hope I am not writing this from the hereafter. I don't think I am dead, anyway.

Ginnie5, PM me if you want to make another trip up here this year for the same reason as last year.

I've always seen more parisites hunting deer than infecting it, everything from scum sucking trespassing leaches to litterbugs to poaching worms. I've never heard of salt having any real effect [some claim that administering rock salt from a .410 dosing device has some merit, never have met anyone with any actual experience using it, despite vocal claims of its merit]. I can say that a liberal application of size 12.5 Redwing applied to the offending posterior of said parisites has shown some effect.
