I'm much more familiar with field corn, but same info applies to sweet corn....
Yes, if the corn grows up,with some stress, it adjusts somewhat to that stress. So it will be a little stronger if it is winded all along.
Some varieties are stronger; some fall over if you sneeze in the field.
Corn goes through different phases; it is very flexible early on, then as it shoots up but doesn't have its brace roots out it can be blown over easily.
As the brace roots set it becomes stronger, then the tassels and silk come out and the ear sets and gets heavier. At this point it is stronger and braced, but the ear is getting heavier and it is more likely to snap off than to bend down.
As the corn matures it typically starts consuming the nutrients out of the stalk, and this leaves the stalk brittle and weak. Some varieties are much worse than others.
So in a 3 week period it can go from soft and flex able to strong but brittle... Just a few days different maturity can mean one field breaks over, the other flexes and you hardly see any damage at all.....
Any time it bends down, it will try to straighten up again. If it snaps off, it might linger on by a thread but it won't be coming back up.
