I make red beet eggs all the time, love um, but dont you have to keep them refrigerated?
What are the other eggs your have in the jars Logbuilder?

Another question: do you or would you charge for the glass jars?

Crack your extra eggs into a bowl. Stir them up gently to break up the yolks. Pour that into zip lock bags, squish all the air out of the bags before closing them, and put them in the freezer. They will keep for years and make will good omelets, scrambled eggs, etc.

Put out a sign - Free Farm Eggs - and don't put a phone # on it, any low income family person driving by I'm sure would stop and get some, do you have an old frig you can hook up outside and put the eggs inside, that way they could drive up, get some eggs and not even bother you.

Had a neighbor many years ago had a refrigerator near the road. Coffee can inside with note on it saying donation accepted. Please return cartons.
Told me he did okay by it. Help pay the feed bill.

I worked in Asia years back and preserved eggs were considered a great treat. I have several huge crocks about the size of a bushel basket that were the shipping container used to export the eggs. The crocks are very ornate and exhibit a lot of pride in the product contained therein. Personally I never tried the eggs. Here is a recipe
