Ear shqped corn bread mould is difficult to clean. Wife says so.

My oldest brother uses Hickory King, which Elk mentioned in his first post. It's great corn, but you might need a step ladder to pick it. I've used a white variety my Dad often raised called Trucker's Favorite and liked it. This year I'm planting a flint corn called Floriani Red. It was a favorite of native Americans in the desert Southwest but was transported to Europe where it was/is often used to make polenta. That's where I first tried it. The people who have made corn meal out of it really seem to like it, and it's pink! I would like to try some pink corn bread.

I always make cornbread in muffin pans and swear I have the best recipe in the world. Those corn shaped ones are a pain to clean, I borrowed one from my aunt once.... never again.

On a side note, when I was little (which I'm in my early twenties) my grandmother use to give me dried corn, a stone tile, and a rock. I guess it was her way of getting me to leave her alone, but I'm very grateful for technological advances in grinding corn (still a good way to occupy a child).

Grinding corn

The first few times I had to clean it. Then I decided to listen to this book and get the pan hot! I mean hot. Not just you can't touch it hot. Have it in the oven at 425. ( temp you bake the cornbread). Bring it out add more coconut oil ( brush it on ) work quickly and add your batter. it's like Teflon!! No cleaning at all. Amazing difference. So get your pan hot before you put your batter in. And not just a little hot.

If you don't want your corncob pan send it my way :-). I ordered a few more off eBay, once I figured it out.

Today I made batches with lots of hot peppers mixed in. Wow they must be my favorite!!

The second picture of the roll pan is before I learned; " hot means HOT". Now they fall out when flipped over. add coconut oil to that hot pan, fill and pop right back in the oven.
That roll pan recipe was a cheddar, sage.

Yep, that's the way my husband does it. He gets that skillet with oil hot sizzling on the stove and then pours the batter in. He waits a minute and then pops it in the oven. He likes to get that crisp crust on the bottom.

I have several of those corn stick pans, a couple no names, one made in Taiwan, two or three Wagners, a Griswald, and a Griswald mini.
Dont use them very often, but they can be fun.

You tell us you have the best cornbread recipe and then leave us hangin'? Lol, that's not fair! Please share?
