Thanks for all the advice! To answer a few questions:

We aren't planning on ever moving. We want to grow old here.

I originally bought the sheep because I wanted to raise them for the meat. But we got attached to the little guy. Don't think we can part with the animals now as they have both turned into pets, and I'll be composting the manure so I can fertilize my future garden and fruit trees.

We went and priced some fencing material and ended up buying enough to fence in about 250 sq feet. Going to try to do it myself. Eventually I'll add another fence the same size next to it, and then I'll have three small pastures I can rotate the animals into. And in return, I get less grass to cut and all the fertilizer I'll ever need.

Will probably keep the truck.

Talked to a man today that can cut the remaining grass at $50 a pop. Will either have him do the grass every month, or save up and buy a mower out of pocket.

If I can finish the fence this month, then I'll build the smaller retaining wall myself next month. Still weighing my options about how to handle the larger retaining wall.

When I said I had a $1000, I meant money I could afford to put towards this. I have another $1000 in savings now for emergencies. It's a thin net, but we do what we have to.

We have a chicken coop and are looking for someone selling chickens now.

This is only the tip of the iceberg. The walkway to my front door is a muddy hill; I plan to build steps out of flagstone in the near future. I have an old barn that I need to clear out so the animals can use it to get out of the cold this winter (right now they only have shelter from sun and rain). I need to find a place to put a garden; all the spots that get enough sun don't have a nearby water source. There's a 20 foot hill that neighbor kids like to play on, so I need a fence around that. I need a french drain in the back of the house to keep water out of the basement. The air conditioner stopped working yesterday (I have a window unit I'm going to use as a backup so I can put off buying a new ac unit till next year). The chimney needs to be regrouted. The list goes on and on. But we got the property for a really low price, and the house is large and completely renovated, so it was a trade off.

Labor is expensive, you will save more money on labor if you do it yourself than any other part of homesteading.
Don't be afraid to ask your friends or family to come help one Saturday afternoon, with some plans you will be surprised how much stuff you can get done. You do the really hard and stupid stuff, they are the help.
Make plans, and lists and prioritize them. Lists make me get more stuff done than any other motivator, without one I just have a bunch of things to do. Now if I could only find where I misplaced that list.
