According to Penn State they grow to 5 feet.

I know the difference between Canadian thistle and the others. I have seen Canadian thistle over 5 feet tall when surrounded by other vegetation. The ones I was pulling out were in a very rich garden and mixed in with black raspberries (the raspberries are over 7 feet tall).
